I can’t believe it is already May, wow! One of my favorite things about this month, aside from the shift towards warm weather and it being my birthday month :), is Cinco de Mayo. An excuse to eat Mexican food? Count. Me. IN.
So today I am sharing a little round-up with you so that you can have a simple, healthy and delicious Cinco de Mayo. Uno, dos, tres… let’s go!
This was my first ever post on The Simple Kitchen (and I can certainly tell by some of the pics, yikes… #alwayslearning)! This guilt free guac uses edamame in combination with avocado so you get added protein with fewer fat and calories.
This is one of my more recent posts inspired from my time in the Mexico. In the past, I have struggled with what type of salad to include when doing a Mexican meal plan and to me this is the perfect complement to this menu!
I love me some sweet potatoes and in my opinion, nachos are one of the biggest treats on the planet… so when you combine the two, it’s simply mind blowing! So scoop (the guac), sip (the marg), and chow down on these babies.
